Not your mother's meatloaf

Makes 4 servings

-1 lb extra lean ground turkey (you can also use extra lean beef  or bison)

-1 egg white beaten

-1 clove of garlic minced

-1 tbs horseradish (optional)

-1/2 packet of plain instant oatmeal (1/4c dry)

-Mrs. Dash seasoning of your choice (it is salt free and full of flavor)

Mix all ingredients. Place in baking dish sprayed w/ non-stick spray (or spray 4 muffin cups in muffin pan and use that for individual portions ready to pack for lunch). Top uncooked meatloaf w/ 2tbs reduced sugar ketchup (Heinz makes one). Bake @ 400 for 30-35 min.

For variations: Note that nutrition facts will slightly change with variations.  

Tex-Mex Meatloaf: Use 2 tsp chili powder and top w/ 1/2c low fat shredded cheddar cheese and top with salsa instead of ketchup.

Italian Meatloaf: Use Italian seasoning and top w/ marinara sauce instead of ketchup. Sprinkle 1 tbs parmesan cheese right before serving.

Asian Meatloaf: mix in 1 tbs low sodium soy sauce, 1/2 tsp ginger, 1tsp red pepper flakes, and add 1/2c minced onion and shredded carrots to mixture. Glaze top w/ 1 tbs light teriyaki sauce.
